New Chef de Cuisine Carries on in Tradition
of Fresh, Seasonally Inspired Menus
at A.R. Valentien at The Lodge at Torrey Pines®
SAN DIEGO, California (October 2005) - The Lodge at Torrey Pines® is pleased to announce the advancement of Tim Kolanko to Chef de Cuisine at A. R. Valentien, the signature restaurant of the renowned Five Diamond San Diego hotel.
Kolanko, who has served as Sous Chef at the restaurant since October of 2003, steps in to the position being vacated by departing Chef de Cuisine Timothy Au. Kolanko joined the staff of A. R. Valentien upon the opening of The Lodge in 2002. His culinary lineage includes two winners of the Food and Wine Best New Chef award, Charles Dale at Renaissance in Aspen, CO, and Stuart Brioza of Tapawingo in Ellsworth, MI and Rubicon in San Francisco.

Under Jeff Jackson and Timothy Au, Kolanko has served in every aspect of the operation of the restaurant, and carries forward the tradition of imaginative preparation of fresh seasonal foods from premium local farms and artisan producers.
Au recently accepted the position of Executive Chef at The Mayflower Inn, a Five Star, Five Diamond Relais & Chateaux country hotel in Washington, Connecticut. During the past four years, Au has earned high praise for A. R. Valentien with inspired menus that showcase premium fresh ingredients from each season.
